From what i heard ( watching this game super closely ) There will be different ships for the different classes. The Jedi ship u saw i believe covers the Jedi Knight and Jedi counsular classes while the Sith ship covers the sith warrior and the sith inquisator. They said at E3 there should be Bounty Hunter class ships and other things. i really hope they let us use customization or i'll end up losing my ship at the tattoonie spaceport......
Customization would be great, Bioware seems to be a company which takes its time to get things right. I have considered signing up for the beta even though its one closed into sessions but I am more likely to await the release. It makes me wonder if this will be a MMO which charges by month, half year ect. or rather there is a price to get the game then buy the expansions later. Bioware, to me at least, seems to be the kind of company to release content in expansions, but since Lucasarts is making the pricing decision only time will tell.

Here is a link to a page with the supposed species in SWTOR which can be played: http://www.wikiswtor.com/Races

I've been thinking of going with a human Jedi Conselor with a Chiss as the tag-along conpanion character. Everything I have seen in this game is voice acted as well. That and the deep story should be quite a treat.

The sound in this game should be very good, Bioware likes near-perfectionism. They seem to bring in many familiar pieces and sound effects from the movies. I heard the "imperial alarm" in a video once, its a classic when well used. I can't wait to hear all the new songs and tracks they made as well, I expect each planet will have its own theme song.

Everyone is still a bit in the dark as to whether it will be a single purchase, a subsciption, or "both". I have a feeling "both" is possible. They say this should be out in spring of next year, there is a beta currently commencing in closed sessions, which can be signed up for. Star Wars: The Old Republic is a MMO, so it will be played online, it takes place 300 years after the Non-MMO game called Knights of the Old Republic, which it is gererally associated with.
